Tomorrow is National Cook Something Bold Day, and this week's Friday Five is presenting you with 5 bold recipes you can cook on your NCSB day! I've found recipes for all of you foodies; from health foods to dessert, I've got you covered for you to go ham tomorrow (no pun intended). Get your apron on and check out these recipes, tomorrow's going to be a bold day for your tastebuds!

1. Italian Eggplant Rollups

This dish is a twist on classic Italian basil-tomato-cheese dishes, and the purple eggplant turns the dish extra bold! These are great hors d'œuvres for a cocktail party, and will surely impress guests!

1 eggplant, cut into strips
1 log goat cheese, chilled and cut into cubes
4 roma tomatoes, diced
2 tbs. balsamic vinegar
3 tbs. olive oil, plus more for cooking
Salt and pepper, to taste

2. Potato Waffle with Cream Cheese & Radish

Everybody loves waffles, and potatoes are the best starch out there, so who wouldn't love potato waffles? Talk about bold, this dish brings together two awesome breakfast foods: waffles and hash browns.

1 cup shredded fresh potatoes
2 cups leftover mashed potatoes
1 onion, chopped
2 garlic cloves, grated
1 tbs oil
¼ cup flour
2 eggs
⅛ cup fresh herbs, chopped
Salt and pepper, to taste
Cream cheese
Sliced radishes

3. Cheesy Chicken Tater Tot Casserole

Once again, potatoes are making bold moves, and bacon is getting in on the action - talk about delicious! This dish is not for the heart healthy, but it sure is nice on your tastebuds! This one is great for the kids - just say tater tots and they'll be seated at the table in no time!

2 pounds of tater tots
2 cups of shredded cheese
½ pound of crumbled bacon
1 pound of skinless boneless chicken breast
¾ cup of milk

4. Sesame Soy Tuna Steak

This dish is for the heart healthy - a nice healthy tuna steak and greens to go with it will not only be full of bold flavor, but will also be a nice healthy option over the previous dish. Warning: not for beginning chefs, but if you think you can handle it, this one may be the boldest I've found!

½ cup red wine vinegar
½ cup chicken broth
3 tbs. ginger, grated
3 tbs. soy sauce
2 tbs. brown sugar
3 cloves garlic, minced

2 tbs. black sesame seeds
2 tbs. sesame seeds

1 lb. mustard greens
2 cloves garlic
1 tbs. rice wine vinegar

Salt and pepper, to taste
Olive oil

Fried onion slices, for garnish
Halved grape tomatoes, for garnish.

5. Dessert Sushi

So you've made your bold appetizers and entrées, now it's time for delicious dessert! This bold spin on sushi will have your eaters impressed and happy at the end of this holiday. Plus you get to pick your favorite fruits to flavor your sweet snack!

1 ¼ cups flour
¼ cup unsweetened cocoa powder
4 tbs. sugar
½ tsp. salt
1 tsp. baking powder
1 ¼ cup whole milk
¼ tsp. vanilla
2 tbs. melted butter

2 cups whipped cream cheese
¼ cup sugar

Diced fruit
Powdered sugar
Chocolate sauce
Strawberry sauce
Mint, for garnish
